Detox Walk Tomorrow!

Fellow NYC detoxers, Detox the World and I are getting the first 2012 life-force generating detox walk through Central Park! If you are in the NYC area, please come join us. This is a great opportunity to meet people in the community, but also to nourish yourself with sunshine and tree-air while getting your chi flowing. We are aiming for 1 to 1.5 hours starting at 8AM Thursday, May 31st. We will start at the fountain near East 72nd street. We hope to see many of you there!

Nutty Cheese Salad topped with Cauliflow Boozy Sundae

What’s for Dinner?

This is a new “featurette” that is meant to give you full meal ideas! My main, full meal is dinner, so I will be posting my nightly dinners in this manner when they are worthy :) Recipes will be following these posts as individual items.

It was unbelievably hot in NY today, and i couldn’t bare the thought of cooked food. But comfort food was in order. So, for tonight’s dinner we enjoyed a Nutty Cheese Salad topped with Cauliflower Fried Rice and culminated with a Boozy Sundae — all raw, all vegan, all tasty! My favorite was the salad :)

Truffle Mushroom Quinoa Risotto w/ Asparagus — Cooking for Family
Serves 4

My mom and dad visited Chis and me in New York last weekend, and I realized that I had never prepared a full meal for them. I didn’t get into cooking until I was far away from home, and home cooked meals weren’t common when we lived together either. They have tasted different bites of things during visits since I’ve started “concocting”, but this was the first meal I prepared especially for them. They seemed very impressed and fully satisfied, so I am comfortable recommending this dish for impressing less clean eaters :)

Combine and bring to a boil, them allow to simmer for 15 min:
1 cup sprouted quinoa
2 cups Pacific mushroom broth

Sauté for 3min, with a pat of butter on medium heat, later adding drops of water to keep veggies from sticking:
2 packages organic shiitake or baby Bella mushrooms, de-stemmed and roughly chopped
1 diced onion
1 minced garlic clove

Add and sauté for another 2 min:
1 bunch chopped asparagus
Truffle salt to taste (or sea salt)

Turn heat off and add quinoa to sauté, thoroughly combining the two. Serve immediately, with an optional topping of raw sheep pecorino for those not so concerned with food combining.

Before serving the risotto I opened with the main (size wise) dish — a large, juicy Italian flavored (fresh basil, parsley and oregano) avocado salad. It was a hit! And I ended with an avocado-chocolate pudding ;) High-res

How To Deal With Salad Boredom or Dinner Laziness :)

  1. Make a fun simple salad, such the Clean Caesar
  2. Steam up some favorite veggies, such as asparagus, and dress simply. Ex: lemon juice, sea salt and raw sheep pecorino
  3. Pile the salad on top of a romaine leaf, place asparagus on top, and roll up all together in a nori sheet, eat as burrito, and repeat!

Clean Caesar Salad

  • 1 box spring mix greens
  • ¼ cup hijiki, soaked
  • Doris’ Raw Caesar Dressing

Raw Caesar Dressing

Blend:

  • 3 medium celery ribs, chopped
  • 2 tablespoons white miso
  • 2 garlic cloves, chopped
  • 2 tablespoons extra-virgin olive oil
  • 2 to 3 tablespoons fresh lemon juice
  • ¼ cup water, as needed

serves 1
Blend all other ingredients, adding strawberries last:
1 organic young coconut meat+water
juice 1/2 lime
pinch sea salt
5 drops vanilla stevia
1 cup ice
1 cup organic strawberries
I rarely make non-green smoothies, but this beautiful treat is totally worth it ;) High-res

AB&J Chocolate Chip Smoothie

Sometimes a craving fix requires extensive trial and error until the right healthy one is discovered. This is a manifestation of my love for almond butter jelly sandwiches, with a few twists:
3 handfuls baby spinach
1 cup raw organic young coconut water
2 tbsp. raw almond butter
1 frozen banana (replace with peeled frozen zucchini+pinch of salt, if you are following a strict yeast-conscious eating plan)
1 cup ice
1 dropperfull vanilla stevia
1/4 cup raw cacao beans or nibs (optional)
1/4 cup raw unsulfured dried cherries (optional; use blueberries for a more yeast-conscious treat)
I blended the 1st 3 ingredients, then then next 3, and added the cacao and cherries on the 3rd round.
It’s been really warm in NY, and this decadent frozen treat was much appreciated after a 45 minute infrared sauna session! In the context of the blended salad, the dried fruit and banana are less yeast feeding than on their own, so this is the lesser evil of “cheats”, especially when you are considering the source inspiration ;)
I have to thank my darling friend, Deva, for the wonderful tip on using cacao nibs for smoothies to retain their color! She was the one that led me down this rabbit hole, and I couldn’t be more thankful!  xoxo High-res

Key Lime Pie In a Bowl
serves 1
FUN FACT: dried coconut combines well with avocado; so without further ado..
Blend:
2 handfuls baby spinach
1/2 avocado
juice of 2 limes (4 key limes if available)
1 tsp lime zest  (optional)
1 cup organic young coconut water
2 tbsp. shredded dried coconut
15-20 drops vanilla stevia
Top with shredded coconut, and enjoy with a spoon. I enjoyed this as my 6pm break-fast today before getting ready to out to dinner with Chris, in celebration of our anniversary. If you wanted this to be a more contracting smoothie, you could replace the avocado with 3 tbsp. almond butter.. Maybe I should have done that :) but I was really craving avocado, and this will move through my system quicker than the almond butter.  High-res
