- 1 eggplant, sliced 1/2” thick
- sea salt
- garlic powder
- 1/3 cup raw goat cheddar
Season both sides of the eggplant slices with sea salt and garlic powder, and bake at 400 degrees for 10 minutes on each side. Sprinkle with goat cheese and bake for another 5 minutes, and enjoy with a large salad (mine was italian inspired). Yay for veggies!
