Iced Carrot “Latte”

Blend, for a couple of seconds:

  • 1/2 cup fresh carrot juice
  • 1 tbsp raw cacao powder
  • 1 tbsp raw carob powder
  • vanilla stevia
  • 1/4 cup young coconut water (optional)

Pour over:

  • 1/2 cup (fresh, preferably) coconut/almond milk 
  • 5 ice cubes

Enjoy on a hot day, instead of your afternoon coffee fix ;). You can also pretend it’s a thai iced tea!

Easy Breazy, Super Lazy Homemade “Milk”

I find that straining large amounts of homemade almond milk through a nutmilk bag can be really tedious.. Not to mention the soaking and preparing in advance.. and the washing of the bag! Oof!I’m going to be honest with you, I am not that organized. And sometimes the mood strikes for a creamy treat, or for a homemade latte and the stuff in a carton just doesn’t cut it. So, here’s my trick:

I only strain as much as I am using at the moment, using a mesh tea stainer which is super easy to just rinse off. That’s usually 1/2 - 1 cup. That doesn’t mean I can’t make a large batch at once though. This is my typical ratio/recipe:

Blend for 30 seconds:

  • 3 cups water 
  • 1/2 cup dried shredded coconut 
  • 1 tbsp raw almond butter (optional; you can just use 2/3 cup coconut) 
  • Pinch of sea salt 

It  will keep in the fridge for about 3 days. I store it in a glass bottle, right out of the blender, and use my tea mesh for the small quantities I need on a regular basis. Tah-da!! This is so much tastier and easier to digest than cow’s milk. While cow’s milk has a “good reputation”, it is actually very misleading. Yes, outside the body it may be alkaline and calcium containing, but inside the body it is very acidic, mucus forming and calcium leeching. Yes, as in it pulls calcium from the bones because calcium is alkaline, and milk is acidic. It’s like magnets! So, whether you chose to consume it or not, please do not fool yourself into thinking that it’s healthy. If you want healthy, try this on for size ;)

Green Latte
Even though I’m past “needing” caffeine, I am not past craving the creaminess of a latte. I decided that I would give my almond milk a colorful enzyme rich chlorophyll boost by using kale.. This is what I consider a guiltless cheat when juicing til dinner and 4 o’clock comes around and I want a treat!
Blend:
1 handful raw sprouted/soaked almonds or 1 heaping tbs raw almond butter 
10 drops vanilla stevia or 8 drops regular stevia + 1/2 tsp vanilla extract or 1/4 bourbon vanilla bean 
Pinch of sea salt 
2 cups pure water
2-4 kale leaves depending on size 
Strain through a mesh sieve or nut milk bag. Enjoy slightly warmed out of the blender! This would be even better with coconut water :) High-res

Green Latte

  • 10 drops vanilla stevia or 8 drops regular stevia + 1/2 tsp vanilla extract or 1/4 bourbon vanilla bean 
  • Pinch of sea salt 
  • 2 cups pure water
  • 2-4 kale leaves depending on size 

Strain through a mesh sieve or nut milk bag. Enjoy slightly warmed out of the blender! This would be even better with coconut water :)

Mint Creme Holiday Cocktail 
serves 4

Blend:
Meat of 1 Thai coconut + coconut water
1/2 vanilla bean scraped 
10 drops stevia
1 tbs raw light agave
10-15 mint leaves 
1/2 tbs coconut oil melted 

In a large cocktail shaker, shake coconut mint creme with 5 ounces organic vodka and ice. Serve in a martini glass with a chocolate sauce swirl ( 1:1tbs cacao and agave + 1 tsp melted coconut oil mixed by hand w/ pinch of sea salt) 

This can be made virgin of course just by omitting the vodka. It can be a great clean dessert after a carb or nut based meal, especially if you omit some of the coconut water as this will make it more of a pudding consistency. Also, adding 1/2 avocado + pinch of sea salt can make this even richer! High-res

1 cup ice 
10-15 drops vanilla stevia (or plain stevia and 1 tsp vanilla extract) 
2 handfuls baby spinach
Raw vegan variation:
Blend:
1 avocado (or 1/2 avocado + 1 banana, but that will add fruit sugar to your shake)
1 box baby spinach 
1 lemon peeled 
1 cup ice 
10-15 drops vanilla stevia
These are both great lunch-time sweet alternatives to the usual savory salad! High-res

  • 10-15 drops vanilla stevia (or plain stevia and 1 tsp vanilla extract)

  • 1 avocado (or 1/2 avocado + 1 banana, but that will add fruit sugar to your shake)

Warming Immunity Tea

  • 3/4” ginger knob diced 
  • juice of 1 lemon 
  • 1 tbs raw honey 
  • pinch of cayenne pepper & cinnamon 
  • fruit tea of choice (blueberry is a favorite of mine) 
  • 1 cup hot water

This tea really gets the blood circulating warming you up from the inside out! Let the hot water, tea and ginger steep for 5-10 minutes while water cools to a temperature comfortable to touch. You can muddle the ginger a bit for extra ginger flavor. Add the rest of your ingredients and enjoy right away! Sometimes i like to juice an apple and add it to the warm concoction omitting the tea.. it makes it comforting like warm apple cider. 

Detox Holliday Spice Latte & Hot Chocolate Delight

‘Tis the season.. for indulgences that are less than ideal for a clean celled body! I know I crave a warming creamy treat when the cold starts creeping in… So I came up with a couple of easy recipes that won’t set back your efforts, while still satisfying the craving!

Holliday Spice Latte 

Brew one cup of  Numi Holiday Chai red tea

For “Milk” Blend:

  • 1 tbs raw almond butter or 1 handful raw soaked almonds
  • 1/2 cup pure water + 1 cup of the brewed red tea
  • 10 drops vanilla stevia
  • 3 cardamon pods 
  • 1/2 tsp ginger (fresh if possible)
  • pinch of nutmeg and cinnamon
  • 1-2 drops natural butterscotch flavor (Frontier brand is good)

Pour through a strainer to remove excess spices and pulp. If you have an espresso machine, pour your “milk” over a shot of espresso, or just brew a strong small cup of coffee. If caffeine isn’t part of your routine anymore, you can simply brew a small cup of red tea! Also if you want to make this even more simple (but a little less clean) you can use store bought unsweetened vanilla almond milk and heat it up with the spices, then pour over holiday tea or coffee, but it’s not as good.. 

Hot Chocolate Delight

Using store bought almond milk works better for this recipe than it does for the other, so feel free to take the shortcut. If you have a small frother, that will make this recipe extra gourmet!

Heat up in a small pot, on medium-low heat, until it starts steaming:

  • 1.5 cups almond milk (home-made or bought) 
  • 2 tbs raw cacao powder or organic pure cocoa powder
  • 2 packets or 10 drops stevia (may adjust according to taste)
  • 1 pinch sea salt
  • 1/2 tsp nutmeg and cinnamon 

Froth milk if you can, then top with:

  • 1 tbs shaved/grated favorite dark chocolate bar 
  • pinch of cinnamon

Cleansing “Mojito” Lemonade 

- juice of 1 lemon + 1 lime
- 5-8 mint leaves (slap it in your palm to release the oils and flavor)
- 5-8 drops of stevia (NuNaturals is best but the 365 brand is good too) 
- 2 cups cool water (ice water is too harsh on the stomach) 

Enjoying this in the morning is a great way to start your body’s cleanse but I love it as a sugar free afternoon pick me up! You can try ginger instead of mint and muddle 1/2” with the water, then strain out the pieces. High-res
